A unique drying process called the “honey method”—in which the sugary layer surrounding the coffee cherries is allowed to dry intact, creating a sticky amber coating—gives the brew its nuanced flavors of dark chocolate and cherry, along with a nutty finish. We offer it as a lighter roast to fully capture all of the subtle characteristics.
